When we dropped off a roaster at Carmel Valley Ranch a while back, we got to talk to Gino Ramos, who is on staff at the resort.
It was obvious from the conversation that Gino really loves cooking and fine foods. He showed us around the kitchen, which always smells wonderful, like they're always caramelizing onions or something.
He told us "this is the secret of our success" and showed us the enormous oven where they cook our pork. It looked like a giant pizza oven, so big I could easily imagine cooking a Medieval feast in it.
